  • Glycerol
  • Three fatty acids joined to glycerol by ester linkage

Types ​

Saturated ​

No C=C double bond
=> Straight hydrocarbon backbone
=> Compact
=> Solid at room temperature

Unsaturated ​

At least one C=C double bond
=> Bent hydrocarbon backbone
=> Less compact
=> Liquid at room temperature
